Family Favorites: Green on Green Dessert
Sunday, as I read one of the papers, I came across a recipe that
brought back a great deal of memories. It was a recipe for a chocolate mousse
that involved avocados! This didn't surprise me at all, having experienced
it in a dessert some years ago. I friend and I were having dinner in some
restaurant in Rio Nido, California. Afterward we were offered wonderful
lime dessert, and were challenged to determine what the ingredients were.
It was creamy and full of lime flavor. I guessed "avocado!", and
they admitted that I was correct - however they wouldn't part with the reciple.
Here's my version of the dessert.
2 Ripe Avocados
1/2 cup Lime Juice
1/2 cup Sugar
1 teaspoon of lemon zest (lime zest tastes too much of chlorophyl)
2/3 cup Whipping Cream
Peal and seed the avocados and place into a food process, and blend them
together with the sugar and lime juice until smooth and creamy. Whip the
cold whipping cream until stiff, and fold 3/4 of the whipping cream into
the avocado mixture. Spoon into serving dishes, and top with the remaining
whipped cream and lime zest.
Serves 6.
