Family Favorites: Tomato Soup

I used to go to the ballet with my friends Jean-Claude and his partner, and my dear friend Patrick Harris. Patrick has long since gone to glory, but I can always remember his casual and yet quite engaging style in the kitchen. This is his version of an old favorite - Tomato Soup, made in February of 1989. Rest in peace, Patrick.
 

3 tablespoons Butter

4 tablespoons of chopped Onion

9 coarsely chopped basil leaves

1 clove of Garlic, minced

1 tablespoon flour

1 can Chicken Broth

3/4 cup Tomato Juice

Tabasco, to taste

Squeeze of Lemon

4 Tomatoes, pealed, seeded, and chopped

Salt and Pepper to taste.

Sauté the onion, basil, and garlic in the butter. When the garlic has begun to release its aroma, add the flour to form a roux, and cook for a few minutes longer. Add the broth, juice, and tomatoes, and cook until all the elements are warmed. Add the tabasco, lemon juice, salt, and pepper to taste, and serve.
